Zucca chef-proprietor Sam Harris has created a stylish and welcoming environment offering great value Italian cuisine.

“It was important when selecting my kitchen supplier to choose a company that had the experience and skills that were essential in giving me what I wanted.

“I wanted to create a place I’d be happy to go to myself, either alone for a couple of courses and a glass of wine, or with a group: somewhere friendly and unstuffy, with great service and great value for money,” says Sam.

“When you work in a kitchen you take things for granted and when it came to working on my own, I realised I needed help.

“Opening a restaurant is really tough, what with all the building issues and having to worry about the food as well. I had no idea we would be able to get all the equipment in here. I thought I would be more limited in terms of the menu; now I can get a lot more technical with the food.

“To have someone who can take away a lot of the headaches really does help. Hansens were great for all sorts of advice, especially on the extraction and I can’t thank them enough for that.

“Hansens were also good at working with the builders and other trades; getting people together. Everyone got on great.”

Hansens placed the warewash towards the front, set back from the line of the main cookline. Almost out of sight, this means used dishes and glassware can be cleared immediately and without staff crossing over themselves to get to the rear of the restaurant.

A custom built unit sits along the warewash wall, holding glasses ready for service. Just behind the bar, the unit is opposite Hansen’s bespoke wine cabinets.

“The aftersales service from Hansens is the same day or next. They also helped me with the pots and pans, advising on the quantity, size, shape…I can’t thank them enough for that.”


Specially Selected Equipment

A Williams coldroom to the rear keeps the bulk of stock ready for service. Mid-way to the front, a bank of three Williams uprights provide immediate storage for the main prep and bakery sections, while Williams counter units provide valuable workspace with storage under.

Operating under the bar front of house, a Hoshizaki icemaker provides Zucca’s dense and crystal clear ice. These machines are chosen for their quality, reliability and user- friendliness. Filters especially are easy and simple for staff to keep clean – and that factor alone – limits the risk of breakdown to the absolute minimum.
